Cinnamon Roll recipe

Soft, yummy cinnamon rolls

½ c hot water

2 TB yeast

2 c milk, scalded

½ c oil (i use butter)

1 c sugar

1 tsp salt

1 c mashed potatoes (instant potatoes work great)

2 eggs

8 c flour

2 cubes butter

Brown sugar


Raisins (optional)


Proof yeast with hot water and 1 TB sugar.  Let bubble for 10-15 minutes. Mix other ingredients (but only 1-2 cups flour).  Add yeast mix and mix well. Add remaining flour 1 cup at a time. Mix until slightly sticky, let raise for 1 hour.

Divide dough into two, turn onto surface and roll out into a rectangle.  Spread with melted butter, spread brown sugar generously and sprinkle cinnamon all over.  If you want add raisins. Cut 1” thick, put on baking sheet. Let rise 30-45 minutes. 

Bake at 375 for 20 minutes.

Make icing while baking.  

1 cube softened butter

1 tsp vanilla

1 lb powdered sugar

1-2 tsp milk

Mix together and spread over warm cinnamon rolls
